Thai Red Curry and Rainbow Salad

The curry:

Thumb of ginger, finely chopped 2 cloves garlic, finely chopped 3 tbsp red curry paste 400ml can coconut milk 200ml vegetable stock Broccoli, baby corn, baby aubergine, sugar snaps, pak choi, beansprouts, peppers Soy sauce, to taste Maple syrup, to taste

Rainbow salad:

Carrots, courgette, mixed peppers Thai basil & mint Peanuts, crushed

Satay dressing:

1tbsp peanut butter 1 tsp soy sauce 1 tsp maple syrup 1 tsp lime juice 1-2 tbsp water, to thin
