Steak and 3 Sauces (Tartar, Truffle and Jerk)

Makes 1

Ingredients

1 large fillet steak

For the tartare sauce:

50ml mayonnaise 1tsp gherkins, finely chopped 1tsp capers, finely chopped 1tsp parsley, finely chopped ½ small shallot, finely chopped Squeeze of lemon juice Salt & pepper

For the truffle sauce:

50ml mayonnaise 1 tsp black truffle paste For the jerk sauce: 50ml jerk marinade (from the chicken recipe)


Method

To make the sauces mix all the ingredients together in small bowls.

To cook the steak, season well the cook over a high heat for a couple of minutes each side.
