Saag Paneer Bhaji Bun

Ingredients and Breakdown

Paneer

2 slices of paneer Cumin Turmeric Garam Masala Chilli Powder

  • Place your 2 slices of paneer in a bowl and mix in all the spices
  • Pan fry the paneer for around 3 minutes on each side

Chutney

Green Chillies Garlic Ginger Coriander Fresh Mint Fresh Coriander Lime

  • Blend together green chillies with garlic , ginger , coriander and mint in oil and finish with squeeze of lime

Onion bhaji

6 tbsp Plain Flour 1/2 tsp Chilli Powder 1 tsp Turmeric , Cumin , Garam Masalla 2 med White Onions Salt

  • Thinly slice onions and add a pinch salt
  • Mix flour with spices and enough water to form thick batter
  • Add your onions to the batter and mix it in
  • Shape bhajis into patties and then deep fry till golden

Saag

1 Onion 1 Garlic 1 tbsp Grated Ginger 1 Green Chilli 1 tbsp Plain Yoghurt 1 tsp Turmeric, Ground Coriander, Curry Powder 200g Paneer 400g Spinach

  • Finely dice onion , garlic , chilli and ginger and fry in some oil
  • Add all spices to the pan and fry 1 minute
  • Pour bowling water over spinach and squeeze out extra water
  • Add spinach to pan and cook down till dry

Brioche buns with garlic butter and nigella seeds

  • Slice buns then toast
  • Melt butter with garlic and brush on top of brioche bun then sprinkle with nigella

To build burger

  • Place down bottom half of the bun
  • First layer is saag
  • Then bhaji
  • Then Paneer
  • Spoon chutney on top of the paneer
  • Place Nigella seed topped bun on top
