40g digestives 20g butter, melted 80ml double cream 80g condensed milk 50g cream cheese Juice and zest of 2 limes Grated zest for garnish
Make the base by crushing the biscuits to a fine crumb, then tip into a bowl and mix in the melted butter. Divide between the bases of two ramekins and set aside to chill while you make the filling. In a bowl mix together the cream, condensed milk and cream cheese until smooth, then add the lime zest and juice and mix again. Divide this between the ramekins and set aside to chill overnight. Decorate with some extra lime zest.
