1 bunch spring onions 2 cloves garlic 1 jalapeño, roughly chopped Juice of 1 lime 2 tbsp olive oil 1 tbsp. brown sugar 1 1/2 tsp. ground allspice 1 tsp dried thyme 1/2 tsp ground cinnamon Salt 3 chicken legs
Plantain chips 4 soft tortillas Red cabbage, finely shredded Lime wedges Coriander Sour cream
To make the jerk marinade put everything into a blender and pulse until a smooth sauce is made. Set half aside for another recipe.
Marinade the chicken for at least 2 hours in the jerk sauce. Cook directly on the BBQ until nicely charred and golden all over then shred the meat from the bones.
Layer up the tacos with the shredded cabbage topped with the chicken. Dot over some sour cream and some more jerk sauce then scatter over some plantain chips, coriander and a squeeze of lime.
