Devon Cream Tea (Cornish Style)


Scones 350g SR flour 1 tsp baking powder 85g cold butter 3 tbsp caster sugar 175ml milk beaten egg to glaze Strawberry jam Clotted cream


  • Mix dry ingredients in a bowl
  • Rub in cold butter till breadcrumb stage
  • Make a well in the middle and add the milk don't overwork
  • Gently roll to about 1 cm deep then cut out rings
  • Brush with egg then bake for 10 mins
  • Once out of the oven, slice scones in half
  • Then spread jam on the bottom half of the scone, top with clotted cream, before placing the top half of the scone on top
