Apple Crumble Akara with Custard Ice Cream

APPLE CRUMBLE AKARA

Ingredients:

  • 4 medium overripe bananas, mashed
  • 160g rice flour
  • 1 tsp baking powder
  • 1 tsp grated nutmeg
  • Pinch of salt
  • 3 tbsps sugar
  • 2-4 tbsps water

Apple compote

  • 6 braeburn apples, peeled, cored and diced
  • 4 tbsps brown sugar
  • 1 tsp cinnamon
  • Juice of a lemon
  • 1 tbsp cornflour
  • 2 tbsps water

Method:

Make the apple compote by adding all the ingredients to a pan and simmering for half an hour. Blend in the jug blender until smooth and leave to cool. Whisk the akara ingredients together to form a smooth batter. In a fryer at 180 degrees drop tablespoons of the mix in and fry to form little balls. Drain the akara and then fill with the apple compote.
